I often enjoy stepping out of my comfort zone and trying new things… I wouldn’t say I am a daredevil, but these last three years with my husband has really shown me that I am better at cooking than I may have given myself credit for. I don’ mean that I am a chef or anything, it’s just that I have indeed picked up some simple yet important skills in the kitchen. In my previous marriage, my creativity was a bit… squashed… I was attempting to cook delicious meals for a spouse that was a vegetarian, wouldn’t eat fat, onion, or garlic, and also would not touch raw vegetables. I found myself falling back on the only dishes I knew would not get stink-eye… mostly pasta.
Fast forward into my second and extremely happy marriage, and I am encouraged by my husband to make whatever my heart desires- even if it may be a potential failure.
Tonight, I made Baby Back Ribs for the first time! It is honestly not much different than cooking any other roast in the crockpot so I don’t know why I had allowed myself to be so intimidated by the thought of it. I suppose I thought that there would be no way that they would taste as good as the ones I have had in restaurants, but boy was I wrong! The Racks went into the crock with some doctored up barbeque sauce and came out 5 hours later literally falling off the bone. I basted the ribs and finished them in the oven to give them a little char around the edges. I whipped up some Smashed Cheddar Bacon Ranch Potatoes and Green Beans with bacon to cozy up alongside the ribs. The meal was a huge hit and has definitely encouraged me to try more new things!!!
